    FermFast 48-Hour Yeast is a rapidly fermenting, alcohol-tolerant yeast strain. Each package produces 6.6 US gallons (25L).  It is capable of reaching ~14% alcohol in just 48 hours and ~20% in 5 days.
    Nearly 20 years of research has gone into this product which can theoretically achieve 23% alcohol by fermentation, something previously considered impossible.  After 48 hours you should have ~14% alcohol.  Continue fermentation for increased alcohol content.  Fermentation is violent - do not use an airlock for the initial period of fermentation as the extreme CO2 pressure will just blow it dry. Follow directions and pay close attention to temperatures for best results.
    USA directions:  Pour 5.5 US gallons of 104F water into your fermenter.
    Option 1:  Add 13.2lb sugar for ~14% in 48 hours.
    Option 2:  Add 17.6 lbs for ~20% in 5 days.  Mix well until completely dissolved. Then add 1 pack of FermFast 48 and stir for one minute. Leave to ferment at 68-90 degrees Fahrenheit (F). Optimum fermentation temperature is 77F. Cover with a clean cloth secured by a Cluett string (loop of string with a section of rubber bands).
    The finished product can be filtered for a higher quality product or purified using carbon and flavored with additives or oak chips.
